If you have been craving for a crispy snack, but don’t want the calories to mount on, Zucchini Fritters can prove to be an ideal choice. Not only are these fritters delightfully tasty, but their wholesome ingredients ensure that they are equally nutritious.

75 Grams Whole Wheat Flour

25 Grams Chickpea Flour/ Besan

500 Grams Thickly Grated Zucchini

2 Onions – Finely Chopped

3-4 Garlic Cloves – Finely Chopped
-
1 Celery Stalk – Finely Chopped
-
Fresh Coriander Leaves – Finely Chopped
-
½ Tsp Black Pepper Powder
-
½ Teaspoon Baking Powder
-
⅛ Teaspoon Black Salt

Salt As Per Taste

Ambuja Gold Refined Soyabean Oil for Shallow Frying
Instructions
Prepping the Batter

In a large bowl, take the thickly grated zucchini. To it, add the chopped onions, garlic and celery.

Add the whole wheat flour and chickpea flour.

Season the mix with black pepper powder, black salt, regular salt, and mix well.

Add ½ teaspoon baking powder and mix very well.

In case the batter becomes too thick, add a little water.
For Frying the Fritters

In a deep cast-iron skillet heat approximately 200 ml Ambuja Gold Refined Soyabean Oil.

Add small chunks of the batter using a small spoon or your hand, and let them shallow fry on medium heat. Add only 4-5 fritters at once

Make sure the batter isn’t too thin, as the fritters might split. In case the fritters split, add some more wheat flour to the batter to help it thicken.

With the back of the spoon or measuring cup, spread lightly. Do not spread thin as the fritters will break.

Let the fritters cook until crisp from one side. Only then, flip them to cook the other side. Now, fry until both sides are crisp and golden brown in colour.

Take out the fritters using a strainer.

Similarly, use the remaining batter to prepare more fritters.
